Sam Dickinson's_Sinful Seven Layer Cookie Bars
Ingredients:
1 Stick of Butter
1 1/2  cups Graham Crackers crushed
1  cup of Chocolate Chips
1  cup of ButterScotch Chips
1  cup of Shredded Coconut
1  cup of Broken Nuts
 (Macadamia, Pecan, Walnuts, etc.)
1  can Eagle Sweetened Condensed Milk
Directions:
Preheat Oven to 350°

Melt Butter on a low heat in a 9x13 baking pan.
Evenly distribute all ingredients in pan in order.
Do NOT mix the ingredients.

Bake for 30 minutes or until golden brown on top.

This is a fun recipe for making with kids!


Dolores Burke's_Pineapple Soufflé
Ingredients:
20 Oz can of Crushed Pineapple
4 Eggs
1 cup Sugar
5 or more Slices Cubed White Bread
1/4 pound of Melted Butter (1 stick)

We always double this recipe!
 

Directions:
Preheat Oven to 350°

Stir all ingredients in a bowl together.
Pour into a greased 2 1/2 quart Corning Casserole
  (or equivalent size baking pan)

Baked at 350° until Brown.

Wonderful with A Ham Dinner!


Deb Dickinson's_Carrot Walnut Raisin Bread
Ingredients:
2 cups Flour
1 1/2 cups Sugar
2 tsp. Baking Soda
1/2 tsp. Cinnamon
3/4 cup Salad Oil
3 Eggs (whisked)
1 tsp. Vanilla
2 cups Grated Carrots
3/4 cup Raisins
3/4 cup Chopped Walnuts
Directions:
Preheat Oven to 350°

Mix Flour, Sugar, Baking Soda & Cinnamon.
Mix in Oil, Eggs & Vanilla.
Mix in Carrots, Raisins and Walnuts.

Add mixture to a greased loaf pan.
Bake in oven for 1 hour 20 minutes.

Make for Thanksgiving!


Maxwell Abramson's  Cider Glazed Turkey
Ingredients:
TURKEY
1/2 gallon Apple Cider
1 Turkey , about 12 pounds
Salt
Pepper
1/4 cup melted Butter
1/4 cup Honey

STUFFING:
1/2 lb. Butter
2 packages (8 oz. each) prepared stuffing mix
1 cup chopped Celery
1/2 cup chopped Walnuts

Past Turkeys:
1978-22lb. bird stuffed 6hrs perfect
1984-10.8lbs stuffed 3hrs 35min perfect
1985-17lbs stuffed 5hrs perfect
1987-20lbs stuffed 6hrs 25min
1988-19.2lbs stuffed 4hrs 55min
1989-15.25lbs 4hrs 10min too dry
1990-16.25lbs 3hrs 45min

Directions:
Cider will be used in stuffing, baste and glaze (chill remaining cider for later use).
Rinse inside and outside of turkey with cold water; pat dry with paper towels. 
Season with salt and pepper.

For stuffing, heat 2 cups cider with butter.
Add stuffing mix, celery and nuts; combine well.
Fill body an neck cavities with stuffing mixture, packing loosely to permit expansion during roasting. (If there is any mixture left, put in greased backing pan and place in oven 45 minutes before turkey is done.)

Skewer openings and truss bird.
Place on rack in roasting pan and roast at 325° for about 15 minutes per pound, for a 12-lb. bird.
Baste with cider every 1/2 hour. 
About 45 minutes before end of cooking period, combine 1/4 cup cider with melted butter and honey; brush over bird. 
Repeat twice more before removing turkey from oven.
 

 


Lily Dickinson's  Zucchini Pie
Ingredients:
3 Cups Zucchini - sliced very thin 
    (leave skin on Zucchini )
1 Onion - chopped fine
1 Cup Bisquick
4 Eggs
1/2 Cup Parmesan
1/2 Cup Vegetable Oil
1 Tsp. Ground Marjoram
1 Tsp. Chopped Parsley
3/4 Tsp. Salt
Pepper
Directions:
Mix all ingredients.
Place in greased 11 X 13 pan.
Bake 350° for 30 minutes.
 

Great For Breakfast!
 


Baked Oatmeal
Ingredients:
2 1/2 cups rolled oats (long cooking) 
1 1/2 cups quick cooking oats 
1/2 cup oil 
1/2 cup brown sugar 
3 eggs 
1-1/2 cups milk 
2 teaspoons vanilla 
2 teaspoons cinnamon 
1/4 teaspoon nutmeg 
2 teaspoons baking powder

Add any or all of the following: raisins, nuts, chipped apples or pears, dried bananas, and/or chopped dates.

Directions:
Combine all ingredients saving 1/2 of the brown sugar. Grease/Spray two 11 x 7 casserole dishes and place half of mixture in each. Sprinkle top with remaining brown sugar. Bake at 350 degrees for 55 minutes or until a knife comes out clean. Cut in squares, place in cereal bowls and serve hot with milk. (The recipe is endemic to the area and is quite "forgiving" in it's composition.)
